Simple Bean Soup

Bean soup

1 can cannelloni beans, drained (Garden of Eden brand preferred)
1Tbsp olive oil
1 medium garlic, finely diced
1 tsp sea salt
3/4 cup water

Cover the bottom of heated saucepan with oil and add garlic. As soon as the garlic softens (about 1/2 minute), add salt and beans (reserving about 1/4 of the can). Wait another minute and add water. Simmer on low flame for 5-7 minutes. With a immersion blender, blend to desired consistency, taking care not to burn. Ladle onto a shallow plate, add reserved beans onto the middle. Garnish with your favorite spice or herb and a sprinkle of olive oil.
