Mango Ceviche

Mango Ceviche

2 medium avocados, finely chopped

2 mangoes, finely chopped

1 medium cucumber, finely chopped

1/2 cup red onion finely chopped

juice of 1 lime

sea salt and pepper to taste

* Mangoes can be a little tricky to peel and chop, buying pre-peeled and pre-cut ones is an easier route.

Combine all ingredients. Let stand for 20 minutes allowing flavors to blend. Serve with crackers.
