3 medium ripe (soft to touch) peaches
2-3 Tbsp coconut or cane sugar
1/4 tsp cinnamon
seeds of one cardamon pod (optional)
1 tsp sage or rosemary (optional)
1 Tbsp lemon juice
Wash and destone peaches. Cut into thumb-sized pieces. In small saucepan combine fruit, sugar, cinnamon and spices (depending on fruit ripeness, sugar may need to be increased or a bit of water added). Simmer, stirring occasionally, and adding lemon juice towards the end. Once the fruit is cooked through and the liquid has become syrup-y, turn off the flame and let cool. Transfer into sterilized jars and store in the refrigerator. Enjoy with yogurt or on toast!
