Apple Chutney


3 medium to large apples

1 Tbsp chopped ginger

1/2 cup coconut sugar

1/4 cup apple cider vinegar

1/8 cup balsamic vinegar

1/4 tsp cinnamon

Core apples, dice and divide into two portions. Combine the remaining ingredients in a small saucepan and bring to boil. Turn down the flame and add half of the apples. Simmer for 20 -30 minutes or until the liquid begins to thicken. Place uncooked apples into a sterilized jar and add in the cooked ingredients. Mix the contents well, cover and let cool. Keep in refrigerator. Enjoy with just about anything!
